Good Old Spagetti and Meatballs

I had never attempted meatballs before. I decided to try after forgetting to thaw out some chicken for fajitas.

  • 2 tablespoons olive oil
  • 1 (20 ounce) package ground turkey
  • 1 egg, beaten
  • 1/3 cup Italian seasoned bread crumbs

DIRECTIONS

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with the olive oil, and place it in the oven while preheating.
  2. In a medium bowl, mix together the ground turkey, egg, and bread crumbs using your hands. Using an ice cream scoop if possible, form the meat into golf ball sized meatballs. Place about 1 inch apart in the hot baking dish. Press down to flatten the bottom just slightly.
  3. Bake for 15 minutes in the preheated oven, then turn them over, and continue baking for about 5 more minutes, or until somewhat crispy on the outside. Serve with pasta and sauce or however you'd like.
I ended up using ground beef because thats what I had. I also added oregano and garlic to the mix. After getting my hands dirty with a little mixing, I did adding some more bread crumbs for a total of around 1/2 cup. I did use panko bread crumbs and this could be the reason why I needed more. I just added until the mix didn't feel so slimy.

These were decent meatballs. I served them over linquine and some canned sauce. I think some basil and grated parmesan would add some interest in the mix. That's what this recipe lacks is some interest. I think the turkey would be better and even throw some spinach in.

Welcome!

I have decided to marry my two loves: cooking and writing. I've started cooking a long time before I ever put pen to paper (or really fingers to keyboard). Though I have to say I've been paid to ramble on in type. As of yet, no one had offered to pay me for my culinary skills which I think are probably far superior to my prose skills.

I come from a line of good cookers (as we say in my family). My grandmother and my mother both can make your mouth water with their simple southern dishes. In their houses, I learned at their sides with them patiently guiding my hands with many years of kitchen wisdom.

My messiness is mine alone though. My mom can cook a 5 course gourmet meal fit for a pristine white-tableclothed table and you would never even know she had set foot in the kitchen when she was done. I can make a grilled cheese and it looks like multiple bombs and tornados have torn through my kitchen with relish (and I'm not talking about pickles). But as one of my best friends says, "Its part of your charm."

The title of the blog even comes as a result of my messiness. As I pondered what to call this unholy marriage, my husband said call it stains on your shirt. I look down realizing that in my culinary zest of preparing dinner this evening almost every item on the menu made it on to my shirt.
